Crispy Ranch Chicken Strips
Ingredients
- 1/3 cup all-purpose flour
- Salt and freshly ground pepper, to taste
- 2 large eggs
- 5 cups Crav’n Flavor Ranch Tortilla Chips, crushed
- 2 pounds boneless skinless chicken breasts, cut into strips
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 3 tablespoons mayonnaise
- 2 teaspoons white vinegar
- 1/4 teaspoon paprika
Method
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Put flour into a shallow bowl, season with salt and pepper, and whisk together. In a second shallow bowl, whisk together the eggs. In a shallow dish add the crushed tortilla chips.
- Dip chicken into the flour to coat and shake off excess. Transfer to the egg to coat and allow excess to drip. Finally, coat the chicken in the crushed tortilla chips, gently pressing to adhere. Place the chicken onto the baking sheet. Repeat until all the chicken is coated.
- Bake for 8 to 10 minutes on each side, or until the chicken reaches an internal temperature of 165°F.
- While the chicken is baking, whisk together the honey, Dijon mustard, mayonnaise, vinegar, and paprika. Serve the honey mustard with the baked chicken.
